About the Chef

JB obtained his diploma from the "Ecole Superieure de Cuisine Francaise" in 2001, where he was first in his year. Backing up this achievement is his on-the-job experience covering a period of 15 years with some of the most renowned top chefs:

* Gerard Vie at the Trianon Palace Hotel, Versailles
* Stephane Raimbault at the Oasis restaurant, Mandelieu la Napoule
* Guy Martin at the Grand Vefour restaurant, Paris

His enquiring nature into the world beyond has led him into developing his career in such places as California and Tahiti. His deepest desire is to pass on to others his passion for the culinary practices not only of his home country but also elsewhere. JP has set up his atelier as a learning center for gourmet delight".

Cooking with Kings near Chateau de Versailles

A wonderfull way to spend a day is to take the train to Versailles where you will spend a few hours learning to cook "a la francaise" with fresh seasonal products.

After your light lunch you are only about 10 minutes (3km) from Versailles and here you can enjoy the afternoon in the Chateaux and Gardens. After your visit you can return back to Paris on your own by train very easily. Take about 35 minutes.

The primary aim is to enable you to seek out quality products according to the season, combine them according to their flavors and cook them for your own pleasure as well as the pleasure of others.

Ideas and techniques can of course be obtained from books and other sources. However, only in-the-kitchen experience plus the inspiration provided by a fully-qualified Chef will provide the degree of knowledge and confidence required. When it comes to learning about taste and handing down its traditions, there is no substitute for personal contact and the hands-on approach.

After the Saturday evening class you can easly take the train back to Paris in 35 minutes with frequent schedule or we can arrange a taxi which will cost 25-40euro payable to the driver depending on where your hotel is.
